On my final afternoon, I joined a foray to the neighbouring Anse Mamin property. Originally serving as a sugar cane plantation, it changed hands and was converted to a mixed fruit and cocoa plantation before being purchased by Jade Mountain’s owner and architect, ex-patriot Russian-Canadian, Nick Troubetzkoy. Following an enlightening tour of the plantation grounds, I freshened up with yet another dip in my pool before having the distinct pleasure of joining Nick and his wife, Karolin, for dinner at Jade Mountain’s rooftop Club. Although all my meals during my stay reflected inspired island fusion cuisine, two items stand out amidst a superb culinary collection. I revelled in my first opportunity to savour tasty white flakes of barracuda while The Crime Traveller’s Wife returned night after night to an island variant on a classic: the plantain brownie banana split.

Over the course of dinner it became apparent that Nick, the self-proclaimed “peasant prince”, takes great pride in having constructed something entirely unique for St. Lucia. Using predominantly local labour and sourcing building materials both locally and around the world, the Troubetzkoys have created a property that Karolin concedes has nothing normal about it. As Nick’s most vocal proponent and Jade Mountain’s Executive Director, Karolin credits Nick’s “drive to perfection”as the source of Jade’s architectural success. “It’s not so much a building as a work of art, like a sculpture”, she states proudly.
